Grandma's Recipes

Not too long ago, I shared with you all my grandmother's recipe for Butterscotch Icebox Cookies. My grandmother was an excellent cook. When my mother was just a very little girl, grandma operated a bus stop diner in Indiana called Peggy's Diner. She never lost that mid-western, meat and potatoes style cooking and those are my favorite recipes that have been passed unto me. I was going through the recipe box and thought "why not share more of these?" so, I am. The first one I will share shows grandma, although she rarely smiled, had a good sense of humor.
Elephant Stew
Ingredients: 
1 Elephant
1 Barrel of Brown Gravy
2 Rabbits (Optional)
Salt and Pepper to taste
Prep:
Clean and cut up elephant into bite size pieces. This should take about 2 months.
Coat with brown gravy and cook over a kerosene fire for about 4 weeks at 465 degrees
This will serve 3,800 people. If more are expected, add the 2 rabbits, but only do this if necessary, as most people dot NOT like to find hare in their stew.

Recipe: Biscuit Wrapped Meatballs

Having a party or get together and not a lot of time to prepare some finger foods? Here is one of my favorite quick, semi-homemade recipes that is sure to please. Biscuit Wrapped Meatballs. What you will need is:

1 bag of pre-made, pre-cooked frozen meatballs
2 tubes of the large size biscuits (like Pillsbury's Grands)
1/2 cup of your favorite BBQ or marinara sauce
1/2 cup shredded cheese (I find Cheddar for BBQ or Mozzarella for marinara works best)
pinch of Italian Seasoning

Directions:
Open up the tube of biscuits and separate each one. Cut each biscuit in half and press and flatten each half into a round flat shape. Place a small amount of the sauce and cheese in the middle, then place the meatball on top. Wrap the dough completely around the meatball pinching the folds closed. Be sure and not add too much sauce as this will prevent the dough from sticking together while trying to wrap them. Place each ball on a greased cookie sheet about 1 inch apart. sprinkle the top with Italian seasoning (or with more cheese for BBQ balls) and bake in a pre-heated 350 degree oven for about 12-15 minutes, or until golden brown). Serve with additional sauce for dipping.

The Best Cookie Recipe!

I thought I would share with you my favorite all time cookie recipe. My grandmother would make these and then my mom would make them every year for me for the holidays. I did not get them this year and have been having withdrawals. So if anyone wants to try and send me some, I will tell you how well they came out. hahaha.


Grandma's Butterscotch Icebox Cookies

In a bowl mix together:
1 cup Oleo (margarine)
2 cups brown sugar
Blend together  slowly adding  2 eggs
and 1 tsp vanilla

In a seperate bowl mix together:
3 1/4 cups flour
1 tsp cream of tarter
1 tsp baking soda
 Blend together well

mix dry ingredients to wet ingredients until formed into a firm dough.

roll into logs in wax paper let set in the refrigerator overnight

The next day remove from wax paper and cut into 1/4 inch slices.
 bake in a preheated oven at 350  until edges are firm and centers a just slightly soft.

You can enjoy right away but I have found they are even better if cooled and then put back in fridge in an airtight container overnight again.

 Enjoy with ice cold milk.
